Kimera may be the Greek name for a hybrid animal such as a Griffin or Centaur, but Luis uses it to refer to the 'unrealistic' dreams he had for this wine. Aged in amphorae, Kimera comes from old vines on the lower part of Navarra. Blackberry, raspberry and plum dominate this wine, it also has a gentle herbaceous note that compliments the liquorice and spice.
